Day 2, Roasted Fennel and Chilli Nuts🎄
These are a total winner, very more-ish, great with drinks, good to send in the mail if that’s your thing and just a lovely thing to give someone if you go over for Christmas drinks etc.
They’re also fabulous bashed up a bit and sprinkled over a warm roasted veg or pearl barley salad for crunch.
Prep time 10 mins
Cook time 40 mins
Makes about 4 cups
1/4 cup caster sugar
1 tbsp sea salt
1 tsp ground chilli or chilli flakes
1 tbsp fennel seeds
2 egg whites
4 cups nuts (I went with a mixture of almonds and walnuts but you could sub in cashews, macadamias, pecans etc)
Preheat oven to 150C and rub a baking tray with a little vegetable oil. Place the sugar, salt, chilli and fennel seeds in a small bowl and mix well. In a separate, larger bowl, whisk the egg whites until frothy. Add the nuts and sugar mixture and gently fold to combine. Spread nuts over the tray and pop in the oven for 40 minutes, stopping half way through to mix everything around.
Turn oven off but leave trays in there to cool (scraping the mixture off the bottom of the tin after about 10 minutes so nothing sticks while cooling). Store in a jar or airtight container
