Hello and happy Friday! We have had a busy week but of course I still found the time to aimlessly browse a few old and new favourite blogs and websites; here are a few of them pasted below. I’ve also pasted a recipe for the above muesli bars which have been a big success chez Hansen this week.

Really good muesli bars
Based on a recipe in Bill Granger’s fantastic book ‘Bill Cooks for Kids’, this one is a crunchy, delicious and mostly healthy snack. Fantastic for school lunches (minus the nuts), it’s also great for morning or afternoon tea at home. Tim has been spending long hours on the tractor recently and a couple of these plus a thermos of tea seem to keep him going nicely! Obviously you could skip the chocolate chips and swap in any other nuts/seeds/fruits you prefer. Makes about 10 bars.
3 cups rolled oats
1/2 cup shredded coconut
1/2 cup flaked almond
1/4 cup linseeds
1/4 cup sunflower seeds
1/4 cup sesame seeds
1/2 cup dried fruit (finely chopped)
1/4 cup milk chocolate, roughly chopped
3/4 cup honey
1/2 cup vegetable oil
Preheat oven to 130C and line a large baking tin with baking paper. Combine the oats, coconut, almond, seeds, fruit and milk chocolate in a large bowl. In a small saucepan, combine the honey and vegetable oil and cook just for a few minutes or until the mixture thins a little. Mix wet and dry together well then spoon into your tray. Smooth the top so it’s completely even then place in the oven to bake for 45 minutes or until golden brown. Let cool for five minutes then cut into bars. When completely cool, store in an airtight container for up to a week.

Hi Sophie, thanks for the mention in your Friday List, seriously that caramel sauce is AMAZING. I have enjoyed following your blog from afar for sometime as we share a similar food ethos, in particular eating local organic food. And will definitely be trying those muesli bars, in need of a new recipe for the lunch boxes!
