A good cheese biscuit is a very handy thing to have tucked away in your recipe collection and this one, by local cook and caterer Gina Allen is a cracker, so to speak. Gina’s cakes, pies, tarts and biscuits can be found every month at our Orange Farmers Market but if you can’t make it there, here’s the recipe for one of her most popular products. These would make great Christmas presents and of course would be delicious with a glass of local Orange chardonnay!
Gina’s cheese biscuits
2 cups plain flour
1/3 cup SR flour
1 t spoon salt
1/2 t dried chilli
1/2 cup parmesan
200gm cheddar cheese, grated
250gm unsalted butter, small cubes
1/2 tablespoon lemon juice
1/3 cup black sesame seeds
Put flours, salt and chilli in food processor and mix. Add cheeses and mix again. Add butters gradually and combine until the mixture resembles coarse breadcrumbs. Drizzle in lemon juice and mix till forms a dough. Knead the dough and roll into 3cm diameter lo. Roll in sesame seeds and wrap up in foil keeping the log shape. Repeat to form second log. Freeze or put in fridge for an hour before cooking as they are easier to cut when cold.
Preheat oven 180C and line a biscuit tray with baking paper. Slice into 3mm rounds and cook for 10-15 mins or until golden.
