Day 5, Nuts and Bolts (don’t judge)
If you’ve listened to episode one of our podcast Something to Eat and Something to Read you’ll know of my love for this odd snack. Our Grandmother used to always have a jar of Nuts and Bolts in the cupboard and we adored the stuff.
It’s a funny mix of Nutri Grain cereal, salted nuts, Worcestershire salt, cayenne pepper etc etc. – don’t judge it till you’ve tried it! The salty, sweet, crunchy mix is delicious with a drink or just as a snack.
I know this won’t be for everyone but it’s a bit of fun and a lot of nostalgia for those of us who grew up with jars of this stuff just out of reach. Anyone else have a soft spot for it too?!
Nuts and Bolts
Prep time 10 mins
Cook time 1 hour
Makes about five medium-sized jars (the ones in the pic)
100g butter
250g Nutri Grain cereal
500g mixed salted nuts
1 tbsp Worcestershire sauce
1/2 tsp cayenne pepper (to taste)
1 tbsp smoked paprika
1 tbsp sea salt (to taste)
Preheat oven to 150C.
Melt the butter in a small saucepan. Then add everything but the cereal and nuts. Stir to combine.
Combine Nutri Grain and nuts in a big bowl and pour over the butter mixture. Stir everything together, I use my hands for this and then scoop the mixture into two big trays. Spread out into one layer then place in the oven for an hour, turning mixture over a few times every 20 minutes or so.
Let cool completely then store in jars or an airtight container
